✔️2 medium zucchini
✔️1/2 cup grated Parmesan cheese
✔️1 tsp garlic powder
✔️1 tsp Italian spice
✔️ ½ cup almond flour
✔️Preheat the oven to 425 degrees Fahrenheit + line two baking trays with parchment paper.
✔️Slice zucchini in half, half again, then slice into quarters (you’ll end up with about 16 slices per zucchini)
✔️ Crack egg into small bowl + lightly beat
✔️ Add all other spices + flour to a separate bowl + stir to combine.
✔️Pat zucchini slices dry, then dip in egg wash before transferring to parmesan mix.
✔️ Coat zucchini in dry mixture then transfer to the baking tray.
✔️ Bake for 25-30 minutes, flipping halfway through on the cut side.
Prep them ahead of time so you just have to pop them in the oven! Serve with hummus or healthy dip of your choice, and enjoy!
